We love sharing these nutritious recipes with our Euphemia community. Up next is this Maple Almond & Goji Granola developed by Nutritionist Steph Geddes, who has garnered a loyal following with her amazing recipes, wealth of knowledge and emphasis on seasonal, healthy eating.
Steph's philosophy is about choosing foods in their whole state and embracing seasonal food that has maximum nutritional value. But most of all, eating healthy should not compromise on taste.
This delicious granola makes a great, healthy breakfast or snack. Store it in reusable jars for a quick grab-and-go option if you need something to take to work, and serve with yoghurt or the milk of your choice!
Maple Almond & Goji Granola
1 serve = approx. 1/3 cup
1 cup flaked coconut
½ cup light extra virgin olive oil
1 teaspoon vanilla extract
1 teaspoon salt
¼ cup maple syrup
2 teaspoons cinnamon
1/3 cup Euphemia Organic Goji Berries
1/3 cup Euphemia Organic Hemp Seeds
Preheat the oven to 180⁰C. Take two baking trays (one small and one large) and line with baking paper.
In a large bowl combine the oats, coconut, oil and vanilla. Combine well and then spread onto the large tray. Bake for 25-30 minutes or until coconut is toasted (you may want to stir halfway).
Meanwhile, place the almonds on the small baking tray and drizzle over the maple syrup and sprinkle the cinnamon on top. Use a spoon to combine well, making sure the maple coats the almonds and the cinnamon is well combined. Place in the oven for 10-15 minutes or until the maple is slightly bubbling or has gone a slightly darker brown. Set aside to cool.
Break up the almonds which would have stuck together and add to the oat mix along with the goji berries and hemp seeds.
Serve with your choice of milk, yoghurt, kefir and fresh seasonal fruit.
